The food that we eat today has become such a part of our everyday lives that we no longer remember its root and origin. 


The food we have three times a day is not just any meal, but a symbol showing the blend of culinary methods across the Indian subcontinent. 


Though many foods have emerged from our own land, several have also been combined with the flavours and cooking methods brought by the people who came to India.


Many foods that are closely associated with the Indian subcontinent actually have their roots in different parts of the world. Let's trace their journey! 


Biryani



The origin of Biryani that we eat today is debatable. 


Various books of the Mughal period describes the preparation of biryani, but its origin is still surrounded with several theories


One theory suggests that biryani evolved from the dish named Pilau, which was brought by Muslim traders. Pilau was a rich aromatic rice, garnished with fried onions and almonds. It was cooked with vegetables or meat. 


The other speculation is that Biryani may have emerged from the Persian food named Biryan or Birinj. The dish involved adding yoghurt-marinated meat to rice, a method that was later adapted and combined with flavoured rice by local cooks. 


What started as a combination of different preparation methods has now originated as a unique dish, with every region in India adding its own flavours and style.
